Kate’s Favorite Sweet Potato Chips/Fries

Another super simple recipe for you! I know many people have a sweet potato recipe so this is for the many of you out there who don’t really know what to do with the sweet little orange guys besides top them with marshmallow & brown sugar. bleh. Because I want all of you to realize that cooking healthy, close-to-the-ground food is easier than you think, count this among your “go-to’s” for easy dinners any night!

-Use 1 sweet potato per 2 people; you can eat more if you want to, but 1 serving = 80 cals = 1/2 sweet potato

-Wash your potato

-A mandolin is the easiest cutting tool for this project & you can buy good quality ones for $40, but if you don’t have one, cut your potato into super thin slices or long wedges

-Preheat oven to 400. Line a baking sheet with foil & spray it with olive oil spray.

-Place slices or wedges on pan with room for each of them. Spray them with olive oil spray.

-Sprinkle with sea salt, ground black pepper, & chili powder to taste.

-Bake for 20 mins then start checking every 5 mins thereafter so they don’t burn on you!

-If doing wedges, plan to flip the wedges at the 20 min mark. If doing rounds, you can get away with not flipping them, they will just be a little softer. Once everybody starts getting a  light brown color on the edges, you’re done! Enjoy!
