Jalapeno-Lime Steak

I love grilling & giving meat a seasoning that really lets the meat shine through, this one does just the trick! Serve with grilled or roasted peppers & 1/2 a sweet potato per person & you have a colorful, super-filling meal! Leftovers work great as lunch the next day served with home-made spinach salad with colorful veggies.

Serves 3 – Ingredients –

  • 2 jalapeno peppers, stemmed
  • 2 cloves garlic, peeled
  • 3/4 teaspoon black pepper
  • 1-1/2 teaspoons sea salt
  • 2 tablespoons lime juice
  • 1-1/2 teaspoons dried oregano
  • 3/4 pound top sirloin steak  DIRECTIONS
  1. Combine jalapenos, garlic, pepper, salt, lime juice and oregano in a blender. Blend until smooth.
  2. **If you don’t want to pull out the blender, this honestly works just fine if you put the ingredients in a bowl, whisk with a wire whisk. The blender just gives the marinade a special consistency – if you’re cool with a quick cleanup of the blender afterwards, then go for it & use it!
  3. Place steak in a shallow pan or large resealable plastic bag. Pour jalapeno marinade over the steak, and turn to coat. Cover pan or seal bag; marinate in the refrigerator for a few hours or overnight. **Don’t worry if you only have 1 hour to marinade, it will be fine. Ideally, you planned ahead well enough to have done this last night for tonight’s dinner!
  4. Preheat an outdoor grill for high heat, and lightly oil the grill grate.
  5. Drain and discard marinade. Grill steak 5 minutes per side, or to desired doneness.
